Marmalade: A Culinary Experience

Hands. Down. Best. Food. Experience. I. Have. Ever. Had. (Sorry, I had to emphasize the drama, because this is serious.) You can find Marmalade in the quaint little town of Old San Juan, Puerto Rico, across from the infamous Casablanca hotel (from the movie). Here I can almost guarantee that you will have one of the best food experiences of your life. Mike and I indulged here for Christmas dinner, be sure to call and make a reservation ahead of time, this place fills up.

So the way it works is you have a set menu, I believe it changes seasonally, and you can pick from a 4-5-or 6 course meal with a wine pairing. I obviously opted for the wine pairing, because come on, wine. Mike and I decided that since we were already ballin’ out of control (this place is a tad pricey)  we would just go all in and each get the six coarse meal so we could sample everything they had. So they have different pages where you get to choose one or two items from each list, obviously depending on how many courses you got.  Here is our seriously euphoric food experience, in photos!

Course 1:

“Ceviche red snapper cured with local lime, grapefruit & avocado smoked chili dressing & basil infused tostones “

“Pacific Yellowtail Poke sashimi grade raw west coast fish served island style with ginger, lemongrass & organic soy mixed with compressed watermelon “

Course 2:

“Tiny White Bean Soup scallions, black truffle oil & pancetta “dust” and Paella “sushi esque” bite size pieces of crispy andulusian style paella filled with smoked chicken, peas and peppers flavored with a saffron-garlic espuma & a chorizo-tomato sauce”

Course 3:

“Risotto of Lobster maine lobster & green onions” 

“Braised Local Rabbit & Organic White Polenta organic grits flavored with swiss chard and fontina cheese resting under a boneless stew of local rabbit & black olive-basil pesto”

Course 4:

“Hand Rolled Black Truffle Pappardelle Pasta wilted spinach, summer truffle & marsala butter “

Course 5:

“Pasture Raised Hormone-Free Beef Tenderloin “Jardinière Style” with roasted garlic cauliflower-potato puree garden beans, tomato raisins & baby arugula”

“Sea Bass wild pacific Hawaiian sea bass served on a bed of green bamboo rice tropical pineapple-ginger-macadamia nut relish & fresh coconut water-lime emulsion”

Course 6:

“The Millionaires Ice Cream” double dose of fresh fall truffles….churned into the ice cream with hazelnuts and honeycomb while resting under a sheath of freshly shaved truffles over the top”

“Salted Caramel Corn Crème Brûlée peanut brittle ice cream”

The food was SO good Mike and I literally had to get up and “walk it off” at least twice, y’all, we were seriously high off of culinary excellence. I have never felt so euphoric after a meal. I am sure the six healthy servings of wine definitely played a part in that, but every bite we took was just incredible. We literally were saying “holy shit” every time we tried a new course! You can’t take us anywhere. Mike ended up laying down on the booth after course five, he was so overwhelmed. (You can’t make this stuff up.) If you ever find yourself in Old San Juan, Puerto Rico and you have some room in the budget to splurge, you seriously NEED to experience Marmalade. For more information on the restaurant click here.
